So, this past week I really wanted to make something with manicotti (sometimes when shopping I get different types of noodles to see what I can do with them.) Well, the time had come for an inspired manicotti dinner. I had searched and searched for manicotti recipes, and none of them quite did what I wanted. So, I made one up, and Jordan ate it several times! So, how did I do it? Well, first I took ricotta cheese and added different spices to it, as well as parmesean cheese. (I have pictures of everything I used!) Then, my sweet husband cooked and shredded the chicken while I was at work. By the way... I now only ever shred chicken with my kitchen aid. So, I came home and added some of my cheese mixture to the chicken and a bit of my prego spaghetti sauce (I always get low sodium spaghetti sauce). I also added a little bit of pepper. Not too much. I also made sure to cook the manicotti before my next step. Then it was time to stuff the manicotti... for this I used my hands and got down and dirty and stuffed them.It w as nice because the manicotti were soft, but it was also challenging because I didn't want to break them (one broke while cooking). Well, after I stuffed them I put them into a casserole dish, then put the rest of the ricotta mixture on top, then some prego sauce, and some more ricotta cheese. CONFESSION: I wish I had some mozerella cheese to add to it, but I didn't so... next time. Anyways, I never use exact measurements when I make my own recipes, but I do when I follow recipes. HAHA! So, it's all a taste and guess game. Use what you need for your family. I always make more than I need because that way Jordan has left overs to take to work on the weekends, and I have leftovers as well. Saves money and time. I'm not great at meal prep, but I'm awesome with left overs! :) HAPPY EATING!
