fried chicken




Recently we made Fried chicken (once for Jordan's birthday, and once cause we wanted to.)  This last weekend 7/27 for chicken finger day we decided instead of spending our money unwisely we would make our own. What we did is we got some chicken breasts and divided them up to smaller portions (if we do it again we'll make them smaller) 
We then put the chicken in egg, flour, egg, and panko garlic seasoning. 
After that we fry it just a bit to brown the outside, and then we bake it at 400 for about 25 minutes. 

We then make ranch using the ranch seasoning stuff and sour cream. And then we also made this yummy chicken finger sauce that I found on pinterest. 

Ingredients
Vegetarian, Gluten free
∙ Makes 3/4 cup sauce
Condiments
  • 2 tbsp Bbq sauce
  • 1 tbsp Dijon mustard
  • 2 1/2 tbsp Honey
  • 1/2 cup Mayonnaise
  • 1 tbsp Mustard, yellow

Salmon pepper?



So, Salmon pepper probably isn't the best name for this, but it's what I got. So, we always by a big fillet and then split it up into a deck of cards size servings and then freeze them, and just pull it out when it's ready, but if you have a big family do what works for you. For three of the deck of cards sized salmons I used a 1/4 of an orange bell pepper, 6 green onions, and 1 clove of garlic. I then added some tumeric, paprika, olive oil, and ground ginger and stirred it all together (make sure all the veggies are finely chopped.) I then poured the mixture over top and underneath the salmon. I served it with corn and cauliflower rice. It was super delicious. I love cauliflower rice because it's healthy and you're not over doing everything with it. My husband always adds more salt to everything I cook because I just don't use a ton of salt due to my heart condition, but feel free to add or tweak if needed! 










Muddy Buddies!!!






Today I decided to make some muddy buddies (I've been wanting to make something like this for a while.) It's so cool all you need is chex (I got chocolate), semi sweet chocolate chips, peanut butter (we use low sodium jif), powdered sugar, vanilla (not pictured), and butter (not pictured). You melt the butter, chocolate chips, and peanut butter for like a minute then stir and add a teaspoon of vanilla and stir then add the cereal and stir, and last add the powder sugar and shake and then you put it in the fridge to cool off! It is seriously one of the easiest recipes and tastiest desserts ever! I want to try and make chex mix next, but that will have to wait for a bit. The recipe for this is included and I have pics of each!
