Carrot Cake

So with my dad's birthday being this past week I decided to make him a carrot cake... I didn't do the usual play by play this time, but you can figure it out... my favorite part was grating the carrots... my hands turned orange like an Oompa Lumpa! :-D oh, I should also mention that I cut my recipe in half and then put it in a 8 1/2 X 11 in pan and then cut the cake in half and layered it! :-D SO MUCH FUN!

1 1/2 cups flour
2/3 cup flaxseed meal
2 teaspoons baking powder
1 teaspoon pumpkin spice
1/2 teaspoon baking soda
3 cups finely shredded carrots
4 eggs
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup canola oil
and Cream Cheese Frosting

1) Preheat oven to 350 F. Grease and lightly flower the pan you use (I did different from the recipe so I will leave it up to your choice of pan or pans! ;) )
2) In a large bowl: stir together flour, flaxseed meal, baking powder, pumpkin pie spice, baking soda, and 1/4 teaspoon salt; in another large bowl: combine carrots, eggs, sugars, and oil (Since I grated the carrots in a bowl I just added the ingredients on top of it.) Add egg mixture all at once to flour mixture. Stir until combined. If you are using separate pans divide the mixture evenly.
3) Bake 25 to 30 minutes depending on the size of the pan... I did 25 minutes and it turned out perfect! When it is cooled frost one layer and place another layer on top... :-D and frost! :-D
