Chile Rellanos

So, the credit for this recipe goes to my old roommate Beka. She would make these all the time while we were roommates and I always wanted to know how... I finally asked her. :) 
Get some green chilies and roast them or buy some roasted ones.


String cheese

Egg roll wraps

slice the string cheese in half length wise.

take off the skin and take out the seeds of the chilies. 

Make sure to wet the sides of the egg roll and then put everything inside it and fold.

then fry until browned on all sides

should look similar to this when done.

and enjoy with any food of your choice

Grandma's Fruit Salad

So growing up my Grandma Mayhoffer made this awesome fruit salad using all different kinds of fruits... she would put down a big lettuce leaf and then put some cottage cheese on top and then just put the fruit around it. When I took care of her I decided I would try it out and it was sooo good! :) Here are the pics so you can see how to do it.

Jonny's Spicy Chicken

So, the credit on this recipe goes to my friend Jonny (last name will be left out to protect the innocent). One day last year he texted me and told me what he did with some chicken he had so I decided to try it...
First, get some Slap Ya Mama Cajun seasoning http://www.slapyamama.com/ the yellow one is the best... the white one has less salt though.
Next, get some chicken thighs or breasts
Spray the skillet with canola oil (Pam)
Then put slap ya mama seasoning all over the chicken and cook it in the skillet... be careful not to burn it. Cook chicken thoroughly.
Then serve it up with any vegetable of your choice and enjoy! :)


Cowboy Casserole


I actually first found this recipe browsing on pinterest and thought it might be something that my dad would like... http://pinterest.com/pin/130041507960481932/ there is the post on pinterest... I decided that in order to make it healthier I would add veggies such as peppers and onions. I also decided to be more fun and use cornbread instead of biscuits... it made for a delicious meal that my dad absolutely loved. :) 








Francs Fajitas

1st get a rotisserie chicken from the store (makes first step extremely easy) Then take meat off the chicken. Next Slice Bell Peppers (Best to use all different colors) and onions and saute' in a skillet (onions should become see through). Next add chicken to mixture. Keep stirring until all is hot.

Put on a warm tortilla with sour cream, cheese, and any type of hot sauce.

finally enjoy your meal! :)
