Pumpkin cheesecake

So this recipe I pretty much followed to the core, but doubled it because I made two cheesecakes... yes, I LOVE CHEESECAKE and since we are having dinner with the Jensen's and that means tons! So, here are pictures... have fun baking! :)

Oh, by the way... this recipe is SO FREAKING DELICIOUS!







Pumpkin Monkey Bread

I think this was the most fun because I followed the recipe for the bread to the core and then changed it tons when I got to add the pumpkin because I already had this amazing pumpkin mixture from the pie bites. I used the amount that it asked for with the pumpkin puree and then the rest I put on top after I put it in the pan... I also decided that instead of making it pull-apart bread I'd turn it into a monkey bread (my sister helped on this idea). I let the dough rise over night and then beat it down this morning and pulled it into little pieces and stretched it out (pictures below...) I put the cinnamon mixture which if I were to do it again I would use tons less sugar! Then rolled them into balls and put them in my mom's bunt type pan. Yeah, way fun! While it was baking my sister made the rum icing for top... we used rum extract cause we don't have alcohol in our house... but anything is fine... When it's done you flip it onto a plate or something and the yummy gooeyness rocks! My sister and I decided to use the icing as a dip on the side! Yeah, very filling but absolutely amazing breakfast!

So for this recipe it has how to make the pie crusts, but I wanted to be a little lazy and found these awesome shortbread mini crusts, and so I got that! I think it shall be tasty... I could have even cut back on the recipe some because it made a ton and I ended up using the extra for my Pumpkin Monkey Bread.

Carrot Cake

So with my dad's birthday being this past week I decided to make him a carrot cake... I didn't do the usual play by play this time, but you can figure it out... my favorite part was grating the carrots... my hands turned orange like an Oompa Lumpa! :-D oh, I should also mention that I cut my recipe in half and then put it in a 8 1/2 X 11 in pan and then cut the cake in half and layered it! :-D SO MUCH FUN!

1 1/2 cups flour
2/3 cup flaxseed meal
2 teaspoons baking powder
1 teaspoon pumpkin spice
1/2 teaspoon baking soda
3 cups finely shredded carrots
4 eggs
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup canola oil
and Cream Cheese Frosting

1) Preheat oven to 350 F. Grease and lightly flower the pan you use (I did different from the recipe so I will leave it up to your choice of pan or pans! ;) )
2) In a large bowl: stir together flour, flaxseed meal, baking powder, pumpkin pie spice, baking soda, and 1/4 teaspoon salt; in another large bowl: combine carrots, eggs, sugars, and oil (Since I grated the carrots in a bowl I just added the ingredients on top of it.) Add egg mixture all at once to flour mixture. Stir until combined. If you are using separate pans divide the mixture evenly.
3) Bake 25 to 30 minutes depending on the size of the pan... I did 25 minutes and it turned out perfect! When it is cooled frost one layer and place another layer on top... :-D and frost! :-D

Nutritious eggs

So, I absolutely love eggs! I think they are fantastic and would have them in any way, shape, form, whatever... (well, almost any... I can't stand hard boiled, soft boiled, or deviled... GROSS) Any way back to my love for eggs... I also love vegetables! They are a gift from GOD! So, this morning I decided what better way to have breakfast then eggs with veggies from mom's garden! WOOT! Yeah, so try it! Eggs with celery, tomatoes, cucumbers, and whatever vegetable you want! It is sooo good! the only thing I would do different is saute' the veg beforehand! :D Enjoy this nutritious breakfast!

This post is more of an informational kind of thing for all my food blog followers... if you aren't on pinterest yet you should check it out! I have found billions of ideas for recipes! It's simply fantastic! And lately I have been going crazy on ideas of making different items for fall. why because it is one, my favorite season & two, I love anything and everything that just happens to have pumpkin as an ingredient! Strawberry Shortcake Cookies

I got this recipe from Adria's (my sister-in-law) mother. IT IS AWESOME! Especially if you love strawberries. However, this is DEFINITELY a recipe to be shared... in other words don't eat the whole thing by yourself! :)

Cheesy Chicken Kiev

cinnamon banana bread!

So, there actually is a story behind why I always put cinnamon in it. I had a roommate in college who would often make banana bread and one time she decided to put cinnamon in it and it was delicious. Ever since then I have decided to put cinnamon in it. I've also had it with chocolate chips, but my favorite is this way.
