Pumpkin cheesecake

So this recipe I pretty much followed to the core, but doubled it because I made two cheesecakes... yes, I LOVE CHEESECAKE and since we are having dinner with the Jensen's and that means tons! So, here are pictures... have fun baking! :)

Oh, by the way... this recipe is SO FREAKING DELICIOUS!







Pumpkin Monkey Bread

I think this was the most fun because I followed the recipe for the bread to the core and then changed it tons when I got to add the pumpkin because I already had this amazing pumpkin mixture from the pie bites. I used the amount that it asked for with the pumpkin puree and then the rest I put on top after I put it in the pan... I also decided that instead of making it pull-apart bread I'd turn it into a monkey bread (my sister helped on this idea). I let the dough rise over night and then beat it down this morning and pulled it into little pieces and stretched it out (pictures below...) I put the cinnamon mixture which if I were to do it again I would use tons less sugar! Then rolled them into balls and put them in my mom's bunt type pan. Yeah, way fun! While it was baking my sister made the rum icing for top... we used rum extract cause we don't have alcohol in our house... but anything is fine... When it's done you flip it onto a plate or something and the yummy gooeyness rocks! My sister and I decided to use the icing as a dip on the side! Yeah, very filling but absolutely amazing breakfast!

So for this recipe it has how to make the pie crusts, but I wanted to be a little lazy and found these awesome shortbread mini crusts, and so I got that! I think it shall be tasty... I could have even cut back on the recipe some because it made a ton and I ended up using the extra for my Pumpkin Monkey Bread.
