Vernon Roger's Chicken and Sausage Jambalaya

 So, Vernon Roger was an amazing cajun cook we would watch on tv when I was a kid. I've posted the recipe on here. Message me if you want it in a text. By the way, we didn't use any tomato in this Jambalaya  Just let me know. Anyways, Jordan and I made this the other night cause we wanted to try something new and I'm so glad we did. It is so delicious and having it for leftovers is no problem either. :)

Turkey Gumbo

 So, this is one I'm so excited for because it is so fun to use and get all the left over meat and make your own broth!

Okay, so first thing you gotta do is... DON'T THROW AWAY YOUR LEFT OVER TURKEY CARCASS!!!!! You can easily put it in some water and just let it boil... the bone and some of the meat you couldn't get off before you'll be able to get off, and it makes a super yummy broth for any kind of soup. After you are finally able to get all the meat off ( I end up pealing mine off so I can make sure there are no bones) throw away the bones! :)

The next thing you need to do is make roux using butter and flour. (This is always the hardest part because PATIENCE). Anyways, today I used a stick of butter and about a cup of flour for it. 


Use more flour than this. and This much butter. Melt the butter and let it bubble then add flour. Mixing constantly so it doesn't Burn. 






this should be the color of the roux when you're done, and then you add some broth in there and stir stir stir! 

After you've added enough broth you can add some previously sauteed veggies ( Here's the trinity for gumbo-- celery, bell pepper, onion, and garlic. Yes, it's four). Sautee those with some turkey and sausage if you desire. I used Turkey Andouille Sausage.
Add everything to the pot with the roux and the broth... And bring to boil and then just let it simmer (be sure not to burn it So, check on it constantly!)






Then, make some rice and serve the gumbo over rice ( I've heard that some people eat it with potato salad.  I've never tried this though).

Jordan's Chicken Bacon Spinach Alfredo

 So, my dear husband has taught himself how to make pasta, and it's amazing! I ended up getting him the pasta hook up for our kitchen-aid and well, we love homemade pasta now! We made this alfredo for my mom's birthday, but some of the pasta pictures are out of order because this is the second time we've done this with out kitchen-aid, and we have so much fun doing it! 


What you will need for the pasta dough: 1.5- 2 cups flour, three eggs, olive oil, and salt. Link for how to make pasta from scratch

For the sauce: heavy cream, parmesan cheese, salt, pepper, bacon, chicken, spinach. 

Be sure to cook the chicken and the bacon beforehand. We seasoned the chicken with Mrs. Dash Garlic & Herb. We also let the spinach cook in the sauce. 

We've really gotten into a habit of cooking our own meals, and so many times we're looking to find recipes to save us money so we don't eat out a ton. And using foods we already buy is also a plus.

Vegan Curry Ramen

Okay, so my husband loves ramen and I usually absolutely hate it, but this recipe you can control the amount of sodium and I LOVE IT! I really don't have much more to say on that. Because well, this is one that everyone can love no matter if you eat meat or don't. And it's super filling. Yummy!

Corn Chowder

So as you can see for this one I looked at two different recipes and then kinda did my own thing.
You will need heavy cream, chicken broth, different veggies one of them being corn of course. (I used carrots, onions, and potatoes). And I did it in the crockpot so it made it super easy. And some butter and a tiny bit of milk.
Then once it's done you can put cooked bacon, green onions, and cheese on top. Super yummy

Homemade beef stew


So, to make this I used Mayhoffer Family Farms LLC stew meat, a package of Mrs. Dash stew meat seasoning, flour, water, beef broth, carrots, potatoes, onions, and peas. (Thought for next time cut vegetables smaller). So, first make sure you brown the meat in oil, add some flour, then add water and Mrs. Dash. (You can probably use any seasoning you'd like, but I like this cause it's no salt). Then add the veggies and the beef broth and let it come to a boil and then simmer for an hour. As you can see I used my cast iron pot. I love cast iron for soups! Enjoy! It was delicious.

Arborio rice, parmesan cheese, guillere cheese, shallots, asparagus, garlic, white wine (it's cooked off), chicken broth.
